Anthony Bourdain’s criticism of brunch was aimed at a restaurant culture that often treated the meal as an afterthought: a place for leftovers, repetition, and work pushed onto cooks with the least power to refuse it. In a later interview, he also explained that brunch work had become personally associated with difficult periods in his own cooking career.

Chef Shawn Tibbitts did not take that criticism as a reason to abandon brunch. He took it as a challenge to change what brunch could represent. The One Still on the List

Time magazine called the James Beard Awards “the Oscars of the food world.” For more than ten years, earning James Beard recognition has remained one of the final goals on my list.

Not because an award creates the work. The work already exists—in the meals, the guests, the community service, the Indigenous foodways, the years of independent recognition, and every receipt preserved in this Public Record.

A James Beard Award would not begin the story. It would force one of the country’s largest culinary institutions to acknowledge what this record has documented for years: that a small, independent, Indigenous, chef-owned brunch restaurant in Tacoma belongs in the national conversation.

That recognition is still on the list. The work continues.
